An "In-egg-xhaustible" Supply



Eggs, eggs and more eggs! From our thirty chickens, we have been getting around two dozen a day, so our egg supply has grown significantly. As the chickens are all quite prolific every spring for a month or two, we have eggs in some way, shape, or form at pretty much every meal. It is a good thing we all love eggs in our family!


Did you know that eggs are good for your eyes? They contain lutein which prevents cataracts and muscle degeneration. The yolks are one of the few foods that naturally contain vitamin D. The word “yolk” came from an Old English word for “yellow.” Thus, we have egg whites and egg “yellows!” The whites and the yolks both contain the same amount of protein. Eggs are nutritious!


The other day we had twenty dozen in the refrigerator! 240 eggs with more coming in every day is a lot to keep up with! Once, we added up all the eggs we had used on that day and the total came to forty-four! That is a lot of eggs.


The boys are so proud of their omelets, scrambled eggs and fried egg sandwiches they make for their breakfasts. Some mornings I hear them sharing their newest tips and techniques with each other, then the next day they won’t say what their secret ingredient is.


When I told them that the fastest omelet maker in the world made 427 two egg omelets in thirty minutes, Jonah said with a playful twinkle in his eye, “I could do that!”


We have been coming up with many ways to have eggs, and here’s how we’ve been managing our prolific egg yield. Last week, I boiled six dozen eggs total, and we used them all!


 The fried egg sandwiches, scrambled eggs, boiled eggs, scrambled egg casserole, angel food cake, egg noodles, egg drop soup, fried eggs, devilled eggs, egg salad, French toast, and boiled eggs on our salad, are a few ways we polish off eggs, but the list could go on.


We are thankful for all the eggs we have been getting and have risen to the challenge of keeping up with the surge of our egg production. Not only are we being good stewards of what we have, but we are nourishing our bodies with nutrient dense food. Not to mention, a lot of delicious goodness!
